Truffle Parm Beef Hump
Beef “Hump” comes from a special breed called Brahmam cattle. They have a distinctive hump on their neck that looks really similar to what you’d see on a camel and I’ve been dying to get my hands on one!
It’s a cut that is completely full of connective tissue, so low and slow cooking is critical. The result was very similar to brisket, but perhaps more beefy. Complemented by the truffles and parmesan, it came out better than I could have hoped!
