Deep Fried Dry-Aged Peking Duck
For ultimate crispiness Iโve learned that some version of dry aging is crucial. This applies to any protein including steak - or in this case, duck... but why?
A normal, fresh piece of meat is full of moisture. That moisture starts to evaporate in the pan โsteamingโ the meat, and only until that surface moisture evaporates can we develop crust. The beauty of dry aging is that much of that evaporation has already occurred prior to cooking.
That is exactly what happened with this duck. Normally, deep fried poultry starts to bubble like crazy during the evaporation step. I was shocked that when I placed this duck in 350F oil, there were literally zero bubbles or splattering. Instead, the fat immediately started bubbling up in an almost eerie silence. The result was color and texture Iโve never been able to achieve with duck. When dry aging isnโt convenient, dry brining is a great technique to achieve similar results.

$3,000 Wagyu A5 Meat Tower
Iโve had this hunk of wagyu sitting in my freezer for a while now and Iโve been trying to figure out how to use it. The problem with cooking such a fatty cut like this whole is that the inside would be excessively rich with no caramelized crust to cut through the fat. That is one reason you often see wagyu A5 served thinly sliced.
Adding some Picanha to the shawarma layers helped cut through the richness. Aside from the fat cap, Picanha is relatively lean and extremely beefy in flavor and they paired great together. At the end of the day wagyu A5 should be eaten on its own to fully enjoy the experience, but as a one time thing this was unreal!
