Why Michelin-Starred Chefs Are Paying Premium For One Of Korea's Rarest Seaweeds | So Expensive

Gamtae is one of South Korea's rarest seaweeds. For centuries, this earthy, sweet seaweed was mainly harvested and eaten raw by locals in the Seosan region. Today, thanks to the efforts of Ju-hyeon Song and her family business, Badasoop, it's become a hit among Michelin-starred chefs in South Korea and abroad. But with gamtae's unpredictable harvests and rising prices, turning this small industry into a thriving business presented a challenge. So how did Ju-hyeon take gamtae from local delicacy to worldwide sensation, in spite of everything? And why is it so expensive?

How 1.5 Million Plastic Bottles Are Turned Into Clothing Every Day | World Wide Waste

Polyester is one of the most popular fabrics in the world. Made from PET plastic, it is prized for its durability, lightness, and low cost of production. While these characteristics make it ideal for various uses across the textile industry, the oversupply of polyester has also fueled an environmental disaster. Now, brands like Adidas, Nike, and Shein are trying to increase the amount of polyester made from recycled plastics -- but is this the best use of old plastic? We visited Tamil Nadu, India, to see how one company makes clothing from used plastic bottles and whether this is the best solution for this waste stream.

How Japan's Priciest Shiitake Mushrooms Fuel The $740 Million Global Shiitake Industry

Japan is one of the leading producers of shiitake mushrooms. These mushrooms are notoriously difficult to cultivate on a commercial scale — especially when using the 1,000-year-old Japanese technique of wood-grown mushrooms. In the US, indoor-grown shiitake sells for upwards of $8 per pound, while forest-grown shiitakes have commanded a much higher price, up to $18 per pound. The most premium shiitake mushrooms are called white flower shiitake, and the forest-grown versions can sell for over $160 per pound. White flower shiitakes have noticeable white cracks on the caps and a strong flavor, but even just a few drops of rain can ruin them completely. Here's why forest-grown shiitake mushrooms are so expensive.
